Italian Oyster - Fresh 500g



When fresh mushrooms are marked "Sold Out", there are none available for our next Wednesday delivery run. You can still contact us to order them for a different date. We currently grow our Italian Oysters seasonally in the cooler months.
We currently deliver for free between Yarloop, Eaton, Bunbury, Boyanup, Capel and Donnybrook on Wednesday afternoons. We can also deliver to Busselton and Dunsborough areas, typically for a $10 fee. Pickup can be arranged from our farm gate or from our markets in Boyanup and Serpentine-Jarrahdale. We cannot post fresh mushrooms.
Italian Oysters have a relatively long fridge life of around 7 days when stored correctly. We don't recommend washing our mushrooms before cooking them - they are always clean and pesticides are never used in our grow rooms. We grow our mushrooms using W.A. Eucalyptus sawdust supplemented with local grains and hydrated with rain water. None of our substrates contain soy or lupin hulls.
Oyster mushrooms are very easily digested and are one of the only Low-FODMAP certified mushroom species. Like all mushrooms, they should always be cooked thoroughly before eating so that you can properly digest them and they will develop their rich umami flavours. Gourmet mushrooms must be picked within a short window and should be eaten fresh so they are harvested within 1-2 days of delivery.
The Italian Oyster (aka. Phoenix Oyster) has a superior flavour and texture to most other Oyster mushrooms. Its stem is the most tender of any Oyster mushroom and it tears apart easily by hand. It has an addictive savoury flavour which is great mixed into pastas, risottos, soups, stir fries or in any recipe calling for mushrooms. Italian Oysters make a uniquely delicious standalone meal when simply fried in a single layer with plenty of butter/oil and salt until brown and crispy on both sides.
Oyster mushrooms are some of the finest culinary mushrooms and typically have soft caps with meaty stems. They are a delicacy in Chinese, Japanese and Korean cuisine and are frequently served in soups or stir fries. They make a great replacement for button mushrooms in a variety of dishes. They have less of the "mushroomy" flavour and more of a "meaty" flavour (aka. umami). They can be sautéed with butter or olive oil, salt and commonly garlic to make a delicious standalone dish or the perfect addition to burgers, sandwiches and salads.
Mushrooms are like mini chemical factories. Oyster mushrooms produce a wide range of antioxidants and other compounds which have been studied extensively. All Oyster mushrooms produce large amounts of a potent antioxidant called Ergothioneine, a compound which is not produced by many organisms but which plays a key role in human health. Compared with button mushrooms, Oyster mushrooms contain twice the amount of beta-glucan, a famous polysaccharide known for a range of benefits. You can find many YouTube videos and scientific studies on the benefits of including these mushrooms in your diet.
Oyster mushrooms are especially rich in B Vitamins compared with other mushrooms including Thiamine (B1), Riboflavin (B2), Niacin (B3), Pantothenic Acid (B5), Pyridoxine (B6) and Folic Acid (B9). They are a great source of protein, dietary fibre and many other nutrients such as Potassium, Phosphorus, Zinc, Copper, Manganese and Selenium.
